we raise the best tasting grass fed beef you can find. We raise beef the old-fashioned way, growing our cattle slowly out on pasture. In the winter, they are fed hay that is baled during the summer in the Yampa and Elk River valleys. We dry age our beef after processing, flash freezing it in cryovac packages when it is in the perfect condition. We never use artificial growth hormones, or feed antibiotics to our cattle, and use no chemical pesticides on our cattle. This means our beef is healthy and free from residues.

We raise Scottish Highland cattle exclusively. This is a very old breed of cattle that is not commonly seen in this country. While this breed of cattle does not grow as quickly as the more common breeds commercially grown in the United States, we feel the marbling, tenderness and flavor of the Highland cattle make it worth the extra time.

Beef from Highland cattle has also been shown to have lower levels of cholesterol than other beef, despite the greater amount of marbling in the meat. This means you get a juicy, flavorful steak, and can still feel good about eating a healthy product!
